Evaluation of Microstructure and Green Extraction Methodologies for Recovering Polyphenols From Sweet Potato Peel
Dr. Juan Manuel Castagnini, from the University of Valencia, Spain, will join us this year to present a talk entitled “Evaluation of Microstructure and Green Extraction Methodologies for Recovering Polyphenols From Sweet Potato Peel”.
The re-use of by-products from food processing and their re-introduction in the production cycle is a strategy that is worth considering for the development of a more sustainable food industry. Although many actors and industrial sectors could help to tackle the limitation of the traditional food system approach, researchers can contribute by innovations able to create a better and more nutritious diet and a sustainable food system. In this sense, the recovery of bioactive compounds from by-products using innovative non-thermal green technologies is an interesting approach to develop new ingredients and products.
Purple and orange sweet potato peel could be an interesting source of bioactive compounds. In this study, through pulsed electric field assisted extraction and supercritical solvent extraction different extracts were obtained and characterized. Also, the microstructure of the solids residues recovered after extraction were analysed to better understand the effect of extraction processes on the matrix.
